Apples were scarce to unobtainable in Cost Rica in the 80’s.

I slice and eat it raw.

It’s composed of chicken browned in sautéed white onion and ginger. To this you add caldo de pollo and simmer for a bit Add quartered or large diced chayote, salt/pepper and continue simmering until chicken is fully cooked and chayote is tender to the fork.

Have had 4 Chayote vines going for over 40 years! 2 spiny and 2 smooth 👌 They go well next to any dinner as the vegetable also great in soups and stews. I like them boiled and then refrigerated to take as a snack when I'm in el monte attending crops! Not to mention the 4 vines provide more than enough chayotes for our family and the whole neighborhood! We are blessed in Mexico to have so many native fruits and vegetables! Also need to mention that the heart seed in the Chayote is like the prize in Cracker Jacks: extremely delicious 😋!]]> Yummy 😋 😋 Chayote!
